first of all sanji is not done during nav vilas;it is done during shradh period i.e. just before nav vilas. As far as I know about sanji it is poojan of 'Sandhya devi'and thats why it is called sanji. Vraj gopika's were doing poojan of sandhya devi to get Shree Thakorji as their 'Pati'. Various sanjis are made by bhav of various 'leela sthalis' of Shree Thakorji.

Yes, Snehalji is absolutely right we do not have sanji in Nav-villas. The Sanji parampara is of Vraj-bhumi and as Snehalji explained, it was a ritual for Vraj Yavti and hense Gopies also did a very big sanji on Shree Krishna's Chatti Pujan and this sanji had gaiya(COWS),Khilona(TOYS), Gowal Sakha, Mayura(PEACOCK) and swastika.
But we do have nine different aarti sajjawat on Nav-Villas.

Navneetji, most of the design are not available in any one books but various pustak have some designs for sanji. Try Shree Rameshbhai Parikh's "VRAJ MERA MAAN BHAIYE". This has some lovely episode on sanji and its parampara. I also understand that his son is now gathering various sanjis from various source and his intention is to publish them, check with Vaishnava Parivaar masik, magazine.
If anyone knows of any pustak, I will be interested to know. I have collected various sanji over the years but they are difficult to come by. Anyway, if anyone interested I will be able to post them in here via our regular posting.
