Today is Vaangi utsav, also known as Baingan dashyam. The makes it obvious, Vaangi/baingan(Egg plant) is used to make the various varieties of dishes including bhartha, shaak, chatni etc. in Samagri for shree Thakorjis bhog. The reason being that from tomorrow Chathurmaas begins and for for months, Baingan/vaangi is not used in seva samagri.
